My Latest Addiction: Egg White Salad

I’m usually not a huge fan of egg salad. But a few weeks ago, I came across Trader Joe’s egg white salads. Now, I’m addicted. I eat one (or sometimes two) containers a day. And at 100-140 calories and 14-16 grams of protein per container, it fits perfectly into my high protein low carb lifestyle.

Now that fall is here, I often find myself craving a steaming hot bowl of soup. One of my absolute favorites is a modified Italian Wedding Soup. Reminds me of grandma’s house (but without all the fat and carbs of her recipe!) First, a little history lesson for you. I’m ashamed to say I didn’t know where “Italian Wedding Soup” got it’s name.
